Ramblings of a News Junkie and a Recipie

As many of you know, I watch or listen to the news all the time. I love it. I love knowing whats going on in the world all the time. Actually, my dream job would be to be a news anchor on Fox news, silly I know. OK, now to my point. Yesterday I was completely amazed and astonished to hear about John Edwards admissions that the 2 year old little girl of his mistress is indeed his child. They kept playing back his heartfelt lies where he repeatedly denied first that he even had a mistress and then that her child was his. What is this world coming to?!? During the presidential election he represented himself as a wholesome, family man who had been married for 30-something years to his wonderful wife (by the way, his wife is wonderful). He also said over and over that he wanted America to really know him as a man. I think that statement came back to bit him in the butt because America knows now that he is a man with a problem and sadly, a liar. I'm just tired of politicians and famous people doing things like this. Where are our morals and standards. What am I going to let my kids watch on TV?

On another note, I have the cutest dog on the planet! However, he is a terrible mess sometimes. On Wednesday morning when I was in the shower he peed on my bed. Seriously?!? On my Bed!! I really thought I was going to kill him. I can't really remember ever being so mad at him. I've said this before but he is my favorite dog I have ever had BUT..I'll never get another yorkie!! Just look at his Little sleepy face in the pic though, you have to love him!




Lastly, I have had the hardest time trying to decide what to make for dinner lately. I've been pretty hungry but nothing sounds good, especially thinking about eating a big piece of meat. It has seemed as though types of pastas have really been my go-to meals. I thought I'd share my favorite Chicken Spaghetti recipe with you today. It makes two 9x13 pans so I usually freeze one for a few weeks down the road.

1 Chicken Boiled and Cut Up ( I never do a whole chicken because it grosses me out, I use about 4 bone-in chicken breasts and then pull the meat off the bone. The bone make the broth taste better)
1 lb. Spaghetti
1 can cream of mushroom soup
1 can cream of chicken soup
1/2 bell pepper chopped
1 medium onion chopped
1 4oz. jar chopped pimentos
1 8oz. box Velveeta
1 stick butter

After boiling chicken, cook spaghetti in chicken broth (do not drain unless you have a lot of water).
In a large skillet, saute onion, bell pepper in the butter until tender. Add cheese until melted and set aside.
Combine skillet mixture with spaghetti and soups. Add chicken and mix well.
Pour into two cooking dishes and bake and at 350 until bubbly- approx 30 minutes. I like to top with grated cheese
* if I'm having a lot of people over I also add 1 can of cheese soup to make a little more.
